Ingredients:
 
1 pinch Salt
 
80g Courgette (Zucchini)
 
1 tbsp Olive Oil
 
1 Egg(s)
 
1 tbsp Sour Cream
 
1 tbsp Parsley
 
2 cloves Garlic Cloves
 
50g (0.50 cup) Cheddar Cheese

Instructions:
1.

Place grated courgette and salt into a colander and mix together

Drain over the sink for 10 min

Wrap the courgette in a kitchen towel

Squeeze and twist over the sink to drain as much water as possible

Place the courgette into a bowl

Add egg, garlic, and cheddar cheese and stir them together

4.

Heat olive oil in a frying pan over medium-high heat

Spoon some batter into the frying pan

Fry for about 2 min on each side, until golden brown

Repeat until all of the batter is used

Serve with soured cream and fresh parsley
