Ingredients:
 
80g Courgette (Zucchini)
 
2.5 tbsp Feta Cheese
 
1 tbsp Olive Oil
 
2 Egg(s)
 
1 tbsp Mint
 
60g Cherry Tomatoes
 
1 pinch Ground Black Pepper
 
1 handful Rocket (Arugula)

Instructions:

Heat the oven to 180°C

Add the olive oil to a small shallow ovenproof dish

Place in the oven to heat for 2-3 min, add the courgette to the hot oil and gently toss to coat

Return to the oven for 2 min, then remove from the oven and add crumbled feta

Meanwhile, beat eggs with mint and season with ground black pepper

Pour the eggs over courgette and crumbled feta, and bake for 15 min, until the eggs have set

Serve the omelette with cherry tomatoes and rocket leaves
