Ingredients:
 
1 tbsp Olive Oil
 
3 pinches Salt
 
2 pinches Ground Black Pepper
 
40g Courgette (Zucchini)
 
2 pinches Smoked Paprika
 
15g Cheddar Cheese
 
45g (0.33 cup) Mozzarella Cheese

Instructions:

Preheat the oven to 350°F/180°C

Line a baking sheet with parchment paper

Lay courgette slices on a baking sheet and lightly brush each courgette slice with olive oil

Roast courgette for 5-8 min

Remove courgette from the oven and top with cheddar and mozzarella cheese

Season with smoked paprika, salt, and ground black pepper

Bake for 8-10 min or until cheese melts

Cool for about 2 min and enjoy!
