The fritters are packed with grated courgette that has been seasoned with fragrant herbs and spices then pan-fried to perfection. The salmon fillet is lightly seared in a hot skillet, creating a crispy exterior while keeping the inside moist and tender. Ingredients:
 
120g Smoked Salmon Fillet
 
40g Spinach
 
50g Cheddar Cheese
 
1.5 tbsp Sesame Seeds
 
1.5 tbsp Olive Oil
 
40g Rocket (Arugula)
 
1 Egg(s)
 
2 pinches Salt
 
1 pinch Ground Black Pepper
 
2.5 tbsp Parsley
 
100g Courgette (Zucchini)
 
1 tbsp Greek Yoghurt
 
100g Cucumber

Instructions:
1.

In a bowl, combine whisked egg with cheddar cheese, fresh parsley, and courgette

Add a pinch of salt and ground black pepper

Heat half the amount of olive oil in a frying pan over medium heat

Add some cheddar cheese and courgette batter into the pan to form fritters and cook for a few minutes until the fritters become golden brown on the sides

Repeat the process until the batter is used up

Arrange courgette fritters with sliced salmon on the plate and layer cucumber, rocket leaves, and spinach on the side of the plate

Drizzle the spinach salad with the rest of the olive oil and sprinkle with a pinch of salt

Serve the fritters, salmon, and salad with Greek yogurt

Sprinkle sesame seeds on top
