Made with grated courgette and a savoury mix of spices, they are fried up until golden brown and served with crispy bacon for an irresistible combination of flavours and textures. Perfect for a low-carb or ketogenic diet, these fritters are a delicious and satisfying way to start your day or enjoy as a satisfying snack.

1 pinch Salt
 
100g Courgette (Zucchini)
 
0.5 tbsp Olive Oil
 
1 Egg(s)
 
1 tbsp Sour Cream
 
2 cloves Garlic Cloves
 
25g Bacon

Instructions:
1.

Place grated courgette in a colander over the sink

Add salt and gently toss to combine

Let it sit for 5 min

Heat a frying pan over medium heat

When hot, add bacon slices in a single layer

Cook for 1-2 min on both sides until browned and crispy

Drain the bacon slices on paper towels and discard the fat from the pan

Crumble the bacon slices

Wrap grated courgette in a kitchen towel, squeeze, and twist over the sink to drain as much water as possible

Place grated courgette into a bowl

Add minced garlic, bacon, egg, and stir well to combine

Heat olive oil in the pan over medium-high heat

When hot, scoop tablespoons of batter for each fritter, flatten with a spatula and cook until the underside is nicely golden brown, for about 2 min

Flip and cook on the other side, about 1-2 min longer

Serve with sour cream and enjoy!
