Ingredients:
 
1 pinch Salt
 
80g Courgette (Zucchini)
 
1 tbsp Olive Oil
 
1 Egg(s)
 
1 tbsp Sour Cream
 
1 tbsp Parsley
 
80g Mozzarella Cheese
 
2 cloves Garlic Cloves

Instructions:
1.

Place grated courgette and salt into a colander and mix together

Drain over the sink for 10 min

Wrap the courgette in a kitchen towel

Squeeze and twist over the sink to drain as much water as possible

Place the courgette into a large bowl

Add grated mozzarella cheese, minced garlic, egg, and stir well to combine

4.

Heat olive oil in a frying pan over medium-high heat, for about 2 min

Spoon some batter into the frying pan

Fry for about 2 min on each side, until golden brown

Repeat the process until all of the batter is used

Serve with sour cream and fresh parsley
