Ingredients:
 
1 clove Garlic Cloves
 
115g Cauliflower
 
20ml Olive Oil
 
145g Prawns (Shrimp)
 
4 tsp Butter
 
1 pinch Salt
 
1 pinch Ground Black Pepper
 
1 tbsp Lime Juice
 
1 pinch Ground Cumin
 
1 tsp Coriander (Cilantro)
 
1 pinch Red Pepper Flakes
 
1 pinch Smoked Paprika
 
1 pinch Chilli Powder

Instructions:
1.

Place the cauliflower in a food processor and pulse until the mixture resembles rice

Set aside

In a bowl, mix together the lime juice, garlic, chilli powder, cumin, smoked paprika, salt, ground black pepper, and red pepper flakes

Add shrimp and stir well

Heat olive oil in a frying pan over medium heat

Add shrimp with sauce to the pan and cook for 2-3 min on each side or until cooked through, then remove and set aside

In the same pan, add butter and cauliflower rice and cook for 3-5 min

5.

Serve the cauliflower rice with shrimp in a bowl and sprinkle with coriander
