This delicious chicken salad is a perfect meal for a warm summer day. Tender pieces of grilled chicken are mixed with a flavourful blend of herbs and spices, then combined with creamy feta cheese and crisp, fresh greens. The tangy taste of the feta perfectly complements the juicy chicken, while the leafy greens add a refreshing crunch to every bite. This salad is not only satisfying but also packed with protein and healthy fats, making it the perfect choice for anyone following a ketogenic diet. It's easy to make and can be enjoyed on its own, as a wrap, or on top of a bed of lettuce.

Ingredients:
 
2 tbsp Olive Oil
 
115g Chicken Breast
 
1 pinch Salt
 
1 pinch Ground Black Pepper
 
1 pinch Curry Powder
 
50g Radish
 
360g Rocket (Arugula)
 
120g Feta Cheese

Instructions:
1.

Preheat the oven to 200ºC

In a bowl, mix 30ml of the Olive Oil, Curry Powder, Salt, and Ground Black Pepper

Brush the chicken breast with the mixture

Allow the chicken to bake uncovered in the oven for 15-20 min, or until the internal temperature reaches 75ºC

Once the chicken reaches the temperature, remove it from the oven and let it rest for about 5 min

Then slice the cooked chicken into thin strips

Toss Rocket leaves, chopped radishes, chicken strips, and feta cheese in a salad bowl

Drizzle it with the remaining Olive Oil
