Ingredients:
 
45g (0.33 cup) Tomatoes
 
2 tbsp Parmesan Cheese
 
0.5 tbsp Olive Oil
 
15g Sun-dried Tomatoes
 
2 pinches Salt
 
2 pinches Ground Black Pepper
 
105g Minced Chicken (Ground Chicken)
 
60ml (0.25 ) Double Cream (Heavy Cream)
 
1 tbsp Coriander (Cilantro)

Instructions:

For the meatballs, in a bowl, combine ground chicken, parmesan cheese, sun-dried tomatoes, a pinch of salt, and a pinch of ground black pepper

Roll the mixture into smaller meatballs

Heat the olive oil in a frying pan over medium heat

Add the meatballs

Fry, turning the meatballs often until they are browned, for about 15 min

Pour double cream and add tinned tomatoes into the frying pan with meatballs

Bring to a boil and let it simmer over medium heat for about 10 min

Season with a pinch of salt and a pinch of ground black pepper

Serve the prepared meatballs in a bowl

Garnish with fresh coriander
