Chicken and Courgette Stir Fry

This savoury and satisfying stir fry is perfect for those following a ketogenic diet. Tender strips of juicy chicken are tossed with ribbons of fresh courgette, creating a delicious and nutritious low-carb meal. The flavours are enhanced with a blend of aromatic herbs and spices, infusing each bite with a burst of mouthwatering taste. Quick and easy to prepare, this dish is a great choice for busy weeknights or whenever you're craving something healthy and delicious.

Ingredients:
 
50g Tomatoes
 
120g Courgette (Zucchini)
 
100g Chicken Breast
 
1 tbsp Sesame Seeds
 
1 tbsp Olive Oil
 
2 tbsp Tahini
 
1 clove Garlic Cloves
 
2 tbsp Soy Sauce
 
1 pinch Chilli Flakes
 
5g Ginger
 
1 pinch Salt
 
1 pinch Ground Black Pepper

Instructions:
1.

Season the chicken breast with salt and ground black pepper

Cut the chicken breast into bite-size cubes

Heat a stir-fry pan over medium-high heat and add half of the olive oil

Cook chicken for 5-8 min, until golden brown and cooked through

Remove from the pan and set aside

To the same stir fry pan, add the rest of the olive oil

Cook courgette for 3-5 min, until softened

Then add chopped tomato and cook for a further minute

Meanwhile, in a medium bowl, whisk tahini sauce, 2 tbsp of water, soy sauce, grated ginger, minced garlic, and crushed chili flakes (optional) until smooth

Add chicken cubes to a wok, then pour tahini dressing on top

Toss the ingredients to combine and cook, stirring frequently, for 5-6 min

Serve the dish in a bowl

Sprinkle with sesame seeds and enjoy!
