40g Spinach
 
2 tbsp Cheddar Cheese
 
1 tbsp Olive Oil
 
2 Egg(s)
 
1 pinch Salt
 
1 pinch Ground Black Pepper
 
1.5 tbsp Double Cream (Heavy Cream)
 
80g Cherry Tomatoes

Instructions:

In a bowl, mix eggs with double cream, cheddar cheese, salt, and ground black pepper

Heat olive oil in a nonstick frying pan over medium heat

Add spinach and cook until wilted, stirring frequently

Stir with a wooden spoon, lifting and folding it over from the bottom of the pan
