150g Cherry Tomatoes
 
2 tbsp Olive Oil
 
25g Rocket (Arugula)
 
4 Egg White(s)
 
1 tsp Lemon Juice

Instructions:

Whisk the egg whites and season with ground black pepper

Heat half the amount of olive oil in a medium nonstick frying pan over medium heat

Pour whisked egg whites and cook for about 10 min until set

Fold the omelet
