Ingredients:
 
85g Chicken Breast
 
1 pinch Salt
 
2 pinches Black Pepper
 
1 tbsp Lemon Juice
 
1 tbsp Mayonnaise
 
225g (1.00 cup) Courgette (Zucchini)
 
1.5 tbsp Rapeseed Oil
 
45g Cheddar Cheese
 
3 leaves Lettuce

Instructions:

Rinse lettuce leaves and pat dry, being careful not to tear them

Set aside

Cut chicken into bite-sized pieces

Season with salt and a pinch of black pepper

Heat rapeseed oil in a frying pan over medium heat

Add the chicken pieces and cook for 7-8 minutes on each side or until golden brown and no longer pink inside

Meanwhile, in a bowl, mix lemon juice, mayonnaise, and black pepper

Set aside

Add courgette, fried chicken pieces, fat-free cheese slices into each lettuce leaf

Drizzle mayonnaise mix, roll up, and enjoy!
