170g Cauliflower
 
105g Minced Pork (Ground Pork)
 
80g Cheddar Cheese
 
1 pinch Salt
 
1 pinch Ground Black Pepper
 
1 tsp Curry Powder
 
2 tsp Ghee Butter

Instructions:

Place the cauliflower florets in a food processor and pulse until the mixture resembles rice

Alternatively, use a box grater

Heat 1 tsp of ghee butter in a pan

Add the cauliflower “rice” and stir-fry until softened

Season with curry powder and mix well

Transfer the “rice” to a microwave-safe one-portion bowl

In the same pan heat the remaining ghee butter

Add the ground pork and stir-fry until lightly browned and cooked through

Season with salt and ground black pepper

Mix well and transfer the cooked pork on top of the "rice"

Sprinkle the grated cheddar cheese over layered "rice" and pork

Place the bowl in a microwave on medium heat

Microwave for 10-15 sec or until cheese is melted
