2 tbsp Double Cream (Heavy Cream)
 
100g Cauliflower
 
85g Cheddar Cheese
 
1 tsp Olive Oil
 
50g Bacon
 
2 pinches Salt

Instructions:

Grate cauliflower florets using a box grater into cauliflower rice

Heat a pan over medium heat

Add bacon and fry for about 3 min, until crispy

Remove from the skillet

Heat the olive oil in a separate pan over medium-high heat

Add cauliflower rice and stir-fry for 4-5 min, until tender but not mushy

Season with salt and ground black pepper

In a bowl mix egg, double cream, and cheddar cheese

Pour the egg mixture over the cauliflower rice and stir together to coat
