1 tbsp Double Cream (Heavy Cream)
 
120g Cauliflower
 
0.5 tbsp Olive Oil
 
85g Cheddar Cheese
 
1 pinch Salt

Instructions:
1.

Grate cauliflower florets using a box grater into cauliflower rice

Heat olive oil in a skillet over medium heat

Add cauliflower rice and stir-fry for 4-5 min, until tender but not mushy

In a bowl mix egg/eggs, double cream, and cheddar cheese

Pour the egg mixture over cauliflower rice and stir together to coat

Cook for a few minutes until the egg is cooked through
