100g Courgette (Zucchini)
 
40g Blue Cheese
 
25g Bacon
 
2 Egg(s)
 
1 pinch Ground Black Pepper
 
2 tsp Olive Oil
 
1 pinch Salt
 
25g Bell Peppers

Instructions:

Preheat the oven to 360°C/180°C

Heat olive oil in a nonstick frying pan over medium heat

Add diced bacon and fry for 3-4 min

Then add chopped bell pepper, courgette, and cook for 2-3 min

Remove the pan from heat and add crumbled blue cheese and set aside to cool

In a bowl, whisk eggs, salt, and ground black pepper

Once the bacon mixture is cooled, add them into a bowl with egg mixture, and stir well

6.

Fill the muffin cups with the mixture

Arrange them on a muffin tray and bake in the preheated oven for 18 min
