35g Chorizo
 
180g Cauliflower

Instructions:
1.

Place cauliflower florets into a food processor

Pulse until the cauliflower resembles the texture of rice

Heat 1/2 of the olive oil in a non-stick frying pan

Chop chorizo slices into smaller pieces and add to the pan

Fry until slightly crispy

Then add cauliflower rice and sauté for 2-3 min until soft but not mushy

Meanwhile, preheat another frying pan to medium-high heat

Add the rest of the olive oil and crack in the egg/eggs

Fry for 5 min until the egg white becomes solid

Add chorizo and cauliflower rice into a bowl

Top with prepared egg/eggs and enjoy!
