Ingredients:
 
3.5 tbsp Olive Oil
 
2 pinches Salt
 
2 pinches Ground Black Pepper
 
140g Chicken Breast
 
40g Tomatoes
 
30g Bell Peppers
 
2 cloves Garlic Cloves
 
45g Cauliflower
 
2 tbsp Coriander (Cilantro)

Instructions:
1.

Add cauliflower florets into a food processor and pulse until the mixture resembles rice

Heat half of the olive oil in a pan or wok, over medium-high heat

Add the chicken pieces, and season with salt and ground black pepper

Cook for 5-6 min, stirring occasionally until chicken is golden and cooked through

Remove chicken from the pan, set aside, and cover to keep warm

4.

Add the remaining olive oil to the pan

Add the minced garlic and saute for about a minute, until fragrant

Add chopped bell pepper and cauliflower rice and cook until cooked through, about 2-3 min

5.

Place chicken and cauliflower rice onto a plate

Top with sliced tomatoes and chopped coriander
