Ingredients:
 
2 tbsp Rapeseed Oil
 
1 pinch Salt
 
1 pinch Ground Black Pepper
 
0.5 tbsp Lemon Juice
 
1 pinch Garlic Powder
 
1 pinch Dried Oregano
 
75g (0.50 cup) Courgette (Zucchini)
 
35g Bell Peppers
 
1 tsp Pumpkin Seeds
 
15g (0.50 cup) Rocket (Arugula)
 
140g Minced Chicken (Ground Chicken)
 
75g (0.50 cup) Cauliflower

Instructions:

Heat rapeseed oil in a non-stick frying pan over medium heat

Add ground chicken breast, season with salt, ground black pepper, garlic powder, oregano

Stir occasionally and let it cook for 10 min

Meanwhile, place cauliflower in a food processor and pulse until the mixture resembles rice

Then add to a pot and cook for 4-5 min in boiling water

Assemble the bowl: add rocket leaves, cooked cauliflower rice, ground chicken, courgette, red pepper, drizzle with lemon juice, and sprinkle with pumpkin seeds
