350g Cauliflower
 
105g Minced Pork (Ground Pork)
 
85g Cheddar Cheese
 
1 pinch Salt
 
1 pinch Ground Black Pepper
 
1 Egg(s)
 
10ml Olive Oil

Instructions:
1.

Preheat the oven to 180°C

Place the cauliflower florets in a food processor and pulse until the mixture resembles rice

Alternatively, use a box grater

Heat half of the olive oil in a nonstick frying pan

Add the cauliflower "rice" and stir-fry until softened

Season with salt and ground black pepper

Transfer the "rice" to an oven-safe one-portion cast iron skillet (or any suitable container)

In the same pan heat the remaining olive oil

Add the ground pork and stir-fry until lightly browned and cooked through

Season with salt and ground black pepper

Transfer the cooked pork on top of the "rice"

Sprinkle the grated cheese over layered "rice" and pork

Beat an egg in the middle

6.

Put the dish in the oven

Bake until the yolk reaches the desired doneness
