60g Cauliflower
 
1.5 tbsp Olive Oil
 
1 Egg(s)
 
1 pinch Salt
 
1 tsp Italian Seasoning
 
15g Basil
 
15g Tomato Puree
 
40g Mozzarella Cheese

Instructions:
1.

Preheat the oven to 200°C

Place a piece of parchment paper onto a baking sheet

Pulse the cauliflower florets in a food processor until they are the consistency of rice

In a pan, stir fry the cauliflower for about 10 min, until the cauliflower is very soft (add a little bit of water, if needed)

In a bowl, whisk the egg

Stir in half of the shredded cheese

Season with Italian seasoning, and salt

Stir cooked cauliflower rice directly into the egg/cheese mixture and mix it very well

Spread the "dough" onto the parchment paper using your hands, to about 0

Bake for about 20 min, until the top is dry and firm, and the edges are a little golden

Let the pizza crust cool for at least 5-10 min at room temperature

Then, spread the cauliflower crust with tomato puree, and top with shredded cheese

Return to the oven for about 5-10 min, until the cheese melts

Serve with fresh basil leaves
