This dish boasts a crispy and flavourful cauliflower crust, topped with savoury tomato sauce and salty bacon pieces. 80g Cauliflower
 
1 tbsp Olive Oil
 
1 Egg(s)
 
1 pinch Salt
 
1 tsp Mixed Herbs
 
30g Bacon
 
4 tbsp Parmesan Cheese

Instructions:
1.

Preheat the oven to 400°F/200°C

Place a piece of parchment paper onto a baking sheet

Pulse the cauliflower florets in a food processor until they are the consistency of rice

In a pan, stir fry the cauliflower for about 10 min, until the cauliflower is very soft (add a little bit of water, if needed)

In a bowl, whisk the egg

Stir in half of the grated cheese

Season with mixed herbs, and salt

Stir cooked cauliflower rice directly into the egg/cheese mixture and mix it very well

Spread the 'dough' onto the parchment paper using your hands, to about 0

Bake for about 20 min, until the top is dry and firm, and the edges are a little golden

Heat the oil in a frying pan over medium heat

Add diced bacon and cook for 4 min until crispy

Let the pizza crust cool for at least 5-10 min at room temperature

Then, top it with grated cheese and bacon

Return to the oven for about 5-10 min, until the cheese melts
