1 pinch Ground Black Pepper
 
1 pinch Italian Seasoning
 
1 pinch Salt
 
25g Cheddar Cheese
 
1 tbsp Olive Oil

Instructions:

Preheat the oven to 375°F/190°C

Line a muffin pan with parchment paper muffin liners

Place cauliflower florets in a food processor

Pulse until the cauliflower resembles the texture of rice

In a mixing bowl, whisk the eggs with a fork

Add cauliflower "rice", low-fat British cheddar cheese, olive oil, British mixed herbs, salt, and freshly ground black pepper

Mix well

Divide the batter into the muffin cups

6.

Bake for 15-20 min, until muffins are completely cooked and no longer wet to the touch
