2 tsp Olive Oil
 
30g Bacon
 
2 Egg(s)
 
1 pinch Ground Black Pepper
 
1 pinch Red Pepper Flakes
 
60g Bell Peppers
 
3 tbsp Cheddar Cheese
 
1 pinch Salt
 
2 tbsp Coriander (Cilantro)

Instructions:

Slice the bell pepper into rings

Heat the olive oil in a pan and add bell pepper rings

Saute for 3 min or until softened

Crack the eggs into the same pan

Season eggs with salt, ground black pepper, and red pepper flakes (optional)

Cook eggs for 1-2 min until whites are set, flip them over, and sprinkle with cheddar cheese

Add bacon slices on the side, cover with a lid and cook until cheese has melted and bacon is crispy
