Bowl with Turkey and Cauliflower Rice

Ingredients:
 
25g (0.50 cup) Lettuce
 
20g Cucumber
 
1 tbsp Olive Oil
 
3 pinches Salt
 
3 pinches Ground Black Pepper
 
1 pinch Smoked Paprika
 
60g Minced Turkey (Ground Turkey)
 
30g Bell Peppers
 
110g Cauliflower
 
1 tsp Pumpkin Seeds

Instructions:
1.

Add cauliflower florets into a food processor and pulse until the mixture resembles rice

Heat half of the olive oil in a pan on medium heat

Add cauliflower rice and cook for about 8-10 min, covered, stirring occasionally to ensure it doesn't burn

Season with salt and ground black pepper to taste

Meanwhile, in another pan, add remaining olive oil and ground turkey

Cook over medium-high heat until it's mostly browned, breaking it up with a spatula as you go along

Stir in the smoked paprika, salt, and ground black pepper and cook for a couple more minutes until the turkey is cooked through

Assemble bowl by adding the lettuce, cauliflower rice, ground turkey, sliced bell pepper, and cucumber

Sprinkle with pumpkin seeds and enjoy!
