The creamy texture of the custard is complemented by the slight tartness of the blueberries, which are scattered throughout the dish. This is a great option for a post-dinner treat or a midday snack.

1 tbsp Blueberries
 
1 Egg(s)
 
3 drops Vanilla Extract
 
120ml Double Cream (Heavy Cream)
 
1 tsp Erythritol
 
1 tsp Butter

Instructions:
1.

Preheat the oven to 180°C

Grease ramekin with softened butter and place in an oven dish

Set aside

In a bowl crack in the egg and add erythritol and vanilla

Whisk until combined

Add the double cream, and whisk well until the egg is dissolved

Pour the mixture into the ramekin

Pour boiling water in the oven dish surrounding the ramekin, until it covers about 2

5 cm from the top of your ramekin

Bake for 30 min, or until golden and set around the edges, but a little wobbly in the centre

You can let it cool or serve warm

Garnish with blueberries
