250g Spinach
 
1 tbsp Olive Oil
 
30g Blue Cheese
 
15g Bacon
 
1 Egg(s)
 
165g Portobello Mushrooms
 
1 pinch Ground Black Pepper
 
1 pinch Dried Oregano
 
1 pinch Salt

Instructions:
1.

Preheat the oven to 200°C

Heat the olive oil in a pan over medium heat

Add portobello mushrooms and fry for 3-4 min until tender

Then add the spinach and season with salt, dried oregano, and ground black pepper

5.

Cook until the spinach wilts and set aside

6.

In the same pan, add diced bacon and cook until brown

7.

Return the mushrooms and spinach to the pan with the bacon and stir well to combine

8.

Remove the pan from the heat and mix in the blue cheese

9.

Transfer the mixture into a ramekin and create a small dip in the centre

10.

Crack the egg into the ramekin and bake in the oven for 10-12 min
