60ml Double Cream (Heavy Cream)
 
1 pinch Ground Cardamom
 
1 drop Vanilla Extract
 
1 Egg Yolk(s)
 
5g Erythritol
 
50g Mascarpone
 
175g Blackberries

Instructions:

Put blackberries in a food processor or use a blender to blend until smooth

Set aside

Pour the double cream into a bowl, and whip using a whisk or the mixer until the cream reaches the soft peak stage

In a separate bowl, beat egg yolks, erythritol, vanilla, and cardamom until fluffy

Mix in mascarpone cheese, blackberry puree, and then fold in the whipped cream

Transfer the mixture into a container with a lid and place it in the freezer

5.

Stir the ice cream every 15 min until it firms up
