Ingredients:
 
10ml Olive Oil
 
1 tbsp Blue Cheese
 
0.5 tbsp Butter
 
1 pinch Ground Black Pepper
 
1 leaf Dried Bay Leaf
 
1 pinch Garlic Powder
 
45ml Double Cream (Heavy Cream)
 
65ml Beef Stock
 
1 pinch Salt

Instructions:

First, prepare the blue cheese gravy

Melt the butter in a pan over low heat

Whisk in the double cream and cook until all of the fats combine

Stir in the beef stock, bay leaf, and garlic powder

Season with a pinch of salt and ground black pepper

Simmer the gravy for a few minutes

Remove the bay leaf, and stir in the blue cheese into the gravy and cook until it thickens

Then cover and remove from the heat

Rub the steak all over with olive oil, a pinch of salt, and ground black pepper

Add the steak to a hot pan, then cook for 6 min for medium-rare, or to your liking, turning every minute

Once cooked to your liking, rest the steak on a plate for 2 min

Pour the blue cheese gravy onto the steak
