Ingredients:
 
1 tbsp Olive Oil
 
30g (1.00 cup) Rocket (Arugula)
 
1 pinch Salt
 
1 pinch Ground Black Pepper
 
1.5 tbsp Lemon Juice
 
100g Cherry Tomatoes
 
180g Salmon Fillet
 
2 cloves Garlic Cloves
 
35g Asparagus

Instructions:

Preheat the oven to 220°C

Line a baking sheet with parchment or baking paper

Place the salmon, skin side down, on one side of the baking sheet, and garnish with garlic

Add asparagus to the other side of the baking sheet

Drizzle with half of the olive oil over salmon and asparagus

Sprinkle with salt and ground black pepper

Bake for about 15 min (cooking time depends on the thickness of the salmon) or until the salmon is cooked through, and the asparagus is tender

In a small bowl mix the rest of the olive oil and lemon juice

Serve baked salmon and asparagus on a plate with cherry tomatoes and rocket
