Bacon, Egg and Cheese Roll-Ups

These roll-ups are perfect for a quick and delicious breakfast, lunch or snack. The bacon adds a salty and smoky flavour, the scrambled eggs are filled with rich protein, and the cheese adds a creamy and savoury touch. The roll-ups are easy to make and can be prepared ahead of time for a busy morning. Simply roll everything up in a fluffy wrap, and you have a satisfying meal that will keep you full and energised throughout the day.

Ingredients:
 
1 Egg(s)
 
1 pinch Salt
 
1 pinch Ground Black Pepper
 
1 tsp Butter
 
1 pinch Garlic Powder
 
1 tbsp Chives
 
1 tbsp Double Cream (Heavy Cream)
 
25g Bacon
 
3 tbsp Cheddar Cheese
 
1 handful Rocket (Arugula)
 
35g Cherry Tomatoes

Instructions:
1.

In a bowl, whisk together egg, heavy cream, garlic powder

Season with salt and ground black pepper

Melt butter in a non-stick frying pan over medium heat

Add egg/eggs and scramble for 3 min, then stir in chives

3.

On a cutting board lay bacon strips

Sprinkle the bottom third with cheddar and top with a spoonful of egg scramble

Roll up tightly

Repeat with the remaining bacon

4.

Return the same pan to heat and add bacon roll-ups seam side down

Cook until crispy on all sides, then transfer onto a paper towel-lined plate until ready to serve

5.

Serve with cherry tomatoes and rocket
