100g Bacon
 
150g Cauliflower
 
150g Broccoli
 
2 tbsp Olive Oil
 
1 tbsp Apple Cider Vinegar
 
2 pinches Salt
 
2 pinches Ground Black Pepper

Instructions:

In a saucepan, bring water to the boil

Add cauliflower and broccoli florets and boil for 6-8 min

Drain and set aside

Meanwhile, preheat a frying pan to medium-high heat and add half of the olive oil

Place bacon and fry for 3-5 min until bacon becomes crispy

Let it cool down before chopping

In a bowl, mix the rest of the olive oil with cider vinegar

Add salt and ground black pepper and mix all ingredients to combine

To a salad bowl, add cauliflower and broccoli florets, and chopped bacon

Drizzle the salad with vinaigrette and toss to combine
